Low Carb Lunchbox Snacks: Cheesy Egg White Chips & Scotch Eggs

Protein is key in staying full and satisfied until you next meal! From cheesy egg white chips to scotch eggs, these recipes are sure to become your new go-to lunch box snack.

Ingredients for Cheesy Egg White Chips

½ cup / 125mL cheese of your choice

8 tbsp / 264mL Naturegg Simply Egg Whites , well shaken

Seasonings (to taste) (optional)

Directions for Cheesy Egg White Chips

1. Preheat oven to 400°F (200˚C).

2. Evenly sprinkle cheese in a well greased mini muffin pan.

3. Beat the egg whites.

4. Mix in seasonings, if desired.

5. Spoon about a half teaspoon of egg whites over cheese. The thinner it is the crispier your chips will be.

6. Bake for 12-18 minutes, depending on the thickness of your eggs.

7. Remove chips using a small spatula and enjoy!

Ingredients for Scotch Eggs

4 ounces bulk sausage meat

1 tbsp Dijon mustard

½ tsp fine sea salt

½ tsp ground black pepper

½ cup flour

2 eggs, lightly beaten

1 cup seasoned breadcrumbs

¼ cup Parmesan cheese, finely grated

Vegetable oil for frying

Directions for Scotch Eggs

1. In a large mixing bowl, blend sausage meat, Dijon mustard, salt and black pepper.

2. Place flour, seasoned breadcrumbs with Parmesan cheese and lightly beaten eggs in 3 separate bowls or shallow pie plates.

3. Divide sausage mixture into 6 equal balls, flattening with your palm. Roll each egg in flour and then wrap with flattening sausage meat. Roll in flour again, then egg and flour and lastly seasoned breadcrumbs with Parmesan cheese. Repeat with each egg.

4. Using a high sided frying pan, fill with 2 inches of vegetable oil, heating to 300 degrees. Be careful to use a thermometer. Oil that is too hot will burn the exterior before the interior is cooked.

5. Gently lower half of your Scotch eggs into the hot oil, rolling to evenly brown all sides. Fry for approximately 4 minutes. Transfer to a paper towel lined baking sheet and place in the oven. Repeat with the next batch of eggs.

6. You can place into a warm oven (around 200 degrees) to keep warm until ready to serve.
