Southwest Chipotle Breakfast Sandwich

A delicious southwestern twist on a quick and tasty breakfast sandwich!

Ingredients

1 English muffin
1 EGG Bakes! Whole Egg Patty
2 slices tomato
2 slices avocado
1 handful romaine lettuce
1-2 tbsp store-bought chipotle mayo

Instructions

1)    Toast English muffin in the toaster.
2)    Microwave egg patty on high for 75 seconds.
3)    Add heated egg patty and rest of the ingredients to bottom half of the English muffin.
4)    Spread the top half of the English muffin with chipotle mayo and place bun on top. Enjoy!

Mediterranean-Inspired Breakfast Sandwich

2-3 slices zucchini

3)    Add heated egg white patty and rest of the ingredients to bottom half of the English muffin.
4)    Spread the top half of the English muffin with hummus and place bun on top. Enjoy!

2 slices tomato
1 handful baby spinach
½ avocado, mashed
Pinch of salt & pepper, to taste (optional)

3)    While bagel is toasting, mash avocado and mix in a pinch of salt and pepper.
4)    Add heated egg white patty and rest of the ingredients to bottom half of the bagel.
5)    Spread the top half of the bagel with mashed avocado and place bagel on top. Enjoy!
