BBQ Breakfast Pouches

An egg-cellent way to fuel up for a day of summer fun! Packed with delicious ingredients like eggs, sausage and cheese, these pouches are easy to prep and grill, and they’re perfectly portable for camping, picnics, and backyard BBQs. Recipe created by Chef Dez, chefdez.com.

Ingredients

fresh spinach leaves

pre-cooked breakfast sausages, sliced in bite-sized pieces

grape tomatoes, cut in quarters

1/2 tsp
ground black pepper
1 cup
grated cheddar cheese
fresh chopped parsley for garnish, optional

Directions

  1. Preheat grill with a medium to medium-low flame (if your grill has a dome thermometer, aim for approximately 300°F to 350°F).

  2. Cut 8 pieces of aluminum foil, each being 12-inch by 12-inch in size. Using 2 pieces of foil for each pouch, make 4 stacks of 2 foil pieces each. Use a 4-inch sized ramekin (or other 4-inch sized round container) to shape each of the four pouches by folding/pressing the 2 pieces of foil up around the outside of the ramekin. Use the same ramekin for each pouch (the ramekin is just for shaping the foil, do not keep the ramekin in the foil).

  3. Once the foil pouches are shaped, spray the inside of the 4 pouches with baking spray.

  4. In each of the 4 pouches, put the following ingredients in this order: 1/4 packed cup spinach leaves, 2 sausages, 4 grape tomatoes, 1/2 cup EGG Creations! Fat Free Original, 1/4 teaspoon salt, 1/8 teaspoon pepper, and 1/4 cup grated cheddar.

  5. Close up the tops of the 4 pouches by bunching/pressing the foil together to seal completely. Place on preheated grill (with grill lid closed) and cook for approximately 20 to 30 minutes until the egg has cooked and set, checking periodically.

  6. Open each pouch and garnish the freshly chopped parsley if desired and serve immediately.

Tips

  1. You’ll need aluminum foil and baking spray for this recipe.
