non-hydrogenated margarine
1 cup / 250 g
Egg Creations Whole Eggs Original, well shaken
corn tortillas (6 inch/15 cm), warmed
processed cheese slices
1/2 cup / 125 ml
chopped tomatoes
avocado, chopped
1 tbsp / 15 ml
hot pepper sauce
1/4 cup / 50 ml
chopped fresh cilantro
lime, cut into 8 wedges


  1. Melt margarine in small nonstick skillet on medium-low heat. Whisk eggs until blended. Add to skillet; cook for 3 minutes or until set, stirring occasionally.

  2. Top tortillas with cheese slices, eggs, tomatoes, avocados, hot pepper sauce and cilantro; fold in half.

  3. Serve with lime wedges.


  1. Serve topped with salsa and sour cream.

  2. Serve with fresh fruit to round out the meal.
