A simple and delicious buttery and nutty French cake with only a few ingredients.

Ingredients

1 cup / 250 ml
butter, diced
1/2 cup / 125 ml
Naturegg Simply Egg Whites
1 cup / 250 ml
icing sugar
1/2 cup / 125 ml
all-purpose flour
1 cup / 250 ml
almond meal

Directions

  1. Pre-heat the oven to 375F.

  2. In a medium pan, on medium-low, melt the butter and let it simmer until it reaches a gold colour and a nutty smell. It will take 3-4 minutes. (Do not walk away from the pan as it can burn quickly). Set aside to allow to cool.

  3. In a large bowl, pour your egg whites and icing sugar. Stir well until combined. Add in the flour and almond meal. Mix well until fully incorporated.

  4. Lastly, pour the melted butter and stir well.

  5. In a greased mini muffin pan (or financiers molds), fill them up with the batter each mold to about ¾ to the top.

  6. Bake for 15 to 18 minutes or until slightly golden.

Tips

  1. Add some sliced almonds on top or a fresh raspberry in the middle.

  2. Can be stored in an air-tight container for 2 to 3 days at room temperature.
