Gluten-Free Protein Boosted Pizza
The addition of eggs and cottage cheese to this easy, yeast-free crust provides additional protein when compared to a traditional pizza crust.

Ingredients
- 1 cup / 250 ml
- cottage cheese (2% or 4% preferred), puréed until smooth
- 1/2 cup / 125 g
- Egg Creations Whole Eggs Original, well shaken
- 2/3 cup / 150 ml
- gluten free all-purpose flour blend
- 1 tsp / 5 ml
- baking powder
- 1/4 tsp / 1 ml
- salt
- 1/2 cup / 125 ml
- pizza or marinara sauce
- 1 1/4 cup / 310 ml
- shredded Pizza-style mozzarella cheese, divided
- Traditional pizza toppings such as pepperoni, sliced mushrooms, sliced peppers etc. (optional)
Directions
Preheat the oven to 400ºF (200ºC). Grease and line a 12-inch (30 cm) pizza pan or large baking sheet parchment paper, lightly greasing the parchment paper as well.
Combine puréed cottage cheese, flour, eggs, baking powder and salt in a medium bowl; mix until well combined. Scrape onto the pizza pan and use a spatula to spread evenly, almost to the edges of the pan. Bake for 15 minutes or until golden. Let stand for 10 minutes.
Spread pizza sauce and 1 cup (250 mL) of the cheese over the crust. Add toppings (if using). Sprinkle with remaining cheese.
Bake for an additional 10 to 12 minutes or until cheese is melted.
Tips
Purée cottage cheese in a blender or food processor until very smooth. If using a large food processor, you can add all the remaining ingredients to the processor to combine rather than transferring to a bowl.
Replace the Egg Creations with 2 large shell eggs.
Fat free and 1% cottage cheese are less ideal for this recipe as they contain more water than higher milk fat options.
If a bubble forms in the crust during baking, insert a paring knife or skewer to deflate.
Add extra flavour to crust by mixing in garlic powder or dried herbs such as oregano or Italian seasoning.
If gluten isn’t a concern, you can easily swap out the gluten-free flour blend for regular all-purpose flour.
