Korean Savoury Pancakes ("Jeon")

Deliciously light and packed with protein, these Korean savoury pancakes, also known as 'Jeon,' are a simple and satisfying dish you can whip up in minutes. Recipe by James Bok (@jamesbok).

Ingredients

Naturegg Omega 3 large brown eggs

medium shrimp, defrosted
1
green onion, diced
1 tbsp / 15 ml
carrot, finely diced
2 tbsp / 30 ml
bell pepper, finely diced (optional)
1 tbsp / 15 ml
canola or vegetable oil
1 tsp / 5 ml
salt
1/4 tsp / 1 ml
ground black or white pepper

Directions

  1. Prepare the Ingredients: Finely dice the defrosted shrimp, green onions, carrots and bell pepper (if using).

  2. Mix the Batter: Crack the eggs into a bowl, add salt and pepper, and whisk. Stir in all the diced ingredients to combine.

  3. Cook the Pancakes: Heat a large non-stick skillet over medium-low heat and add 1 tablespoon of oil. Spoon the egg mixture into the pan to form small, circular pancakes. Cook for about 2 minutes, or until the bottoms are lightly golden. Flip and cook for an additional minute, then flip once more for even cooking. Remove the pancakes from the skillet and set them aside. Repeat with the remaining batter.
