Ingredients

3/4 cup / 175 ml
fat-free vanilla Greek yogurt
1 tsp / 5 ml
finely grated orange zest
4
Naturegg Omega 3
8
slices, day-old whole-wheat bread, about 1/2-inch (1 cm) thick
2 cup / 500 ml
frozen mixed berries, such as raspberries, strawberries or blueberries, thawed
1 1/4 cup / 300 ml
1 or 2% milk
1/2 tsp / 2 ml
ground cinnamon
2 tsp / 10 ml
vanilla extract

Directions

  1. Stir the yogurt with the orange zest; set aside.

  2. Pour the eggs into a shallow dish. Coat a large, nonstick skillet with nonstick spray; set over medium heat. Whisk eggs with milk, vanilla and cinnamon in a shallow bowl.

  3. Working in batches, soak both sides of the bread in the egg mixture until saturated; transfer to the skillet. Cook for 2 to 3 minutes per side or until golden. Repeat using remaining bread and egg mixture. (Coat the skillet with nonstick spray between batches as needed.)

  4. Spread the yogurt mixture evenly over 4 pieces of French toast; arrange a layer of berries over the yogurt. Cap with remaining French toast.

Tips

  1. Thaw berries on a paper towel-lined plate to blot any excess fluid.

  2. Using slightly stale bread soaks up more egg and makes better French toast.

  3. Use fresh berries when in season.
