Cranberry Pistachio Biscotti

Ingredients
- 2 cup / 500 ml
- all purpose flour
- 1 tsp / 5 ml
- baking powder
- 1/4 tsp / 1 ml
- salt
- 1 cup / 250 ml
- granulated sugar
- 1/2 cup / 125 ml
- Egg Creations Whole Eggs Original, well shaken
- 1/4 cup / 50 ml
- melted unsalted butter
- 1 tsp / 5 ml
- vanilla extract
- 1/2 cup / 125 ml
- dried cranberries
- 1/2 cup / 125 ml
- shelled, unsalted pistachios
Directions
Preheat oven to 350°F/180°C.
Stir flour with baking powder and salt in a bowl. In a separate large bowl, whisk sugar with eggs, butter and vanilla until well combined. Sprinkle flour mixture over, stir to combine. Mix in cranberries and pistachios, just until evenly incorporated.
Divide dough into two portions; form each portion into a log, about 8 x 3-inches/20 x 7.5 cm and 1 inch/2.5 cm thick. Place logs, well spaced apart on a large, parchment paper lined baking sheet.
Bake for 30 minutes or until golden and just beginning to crack. Cool slightly. Reduce oven temperature to 325°F/160°C.
Slice loaves, on a slight angle, about 1/2 inch/1 cm thick. Return cut-side-up to baking sheet.
Bake for 10 to 12 minutes, turning halfway through or until golden and crisp. Cool completely on a wire rack.
Tips
For extra crunchy biscotti, replace Egg Creations Whole Egg with Simply Egg Whites.
Biscotti will keep fresh in an airtight container at room temperature for up to 3 weeks (or freeze for up to 2 months).
Biscotti can be drizzled with or dipped into melted chocolate for an elegant garnish.
Dried cranberries and pistachios can be replaced with up to 1 cup/250 ml any combination of mix in ingredients you prefer such as dried fruit, whole nuts (for a prettier look when sliced), chocolate chips or chunks. Flavours can be adapted as well too using extracts, spices and finely grated citrus peel. Some of our favourite combinations include:
o Cranberry Almond: Add 1/2 tsp/2 ml almond extract along with vanilla and use whole unblanched almonds.
o Mocha Cherry Chip: Add 1 tbsp/15 ml espresso powder along with vanilla. Use dried cherries and chocolate chips.
o Toffee Pecan: Use whole pecans and toffee bits.
o Blueberry White Chocolate Lemon: Using 1 tbsp/15 ml grated lemon zest, dried blueberries and white chocolate chips.
