Ingredients
- 1 package / 84 g
- EGGS2go! Omega 3 Hard Boiled Snack Pack, quartered
- toasted sesame seeds
- fresh cilantro leaves
- 2 tbsp / 30 ml
- Asian sesame vinaigrette (or to taste)
- 1/4 cup / 60 ml
- chopped bell pepper
- 1/4 cup / 60 ml
- shredded carrot
- 1/2 cup / 125 ml
- shredded cabbage
- 1/2 cup / 125 ml
- cooked edamame
- 1 cup / 250 ml
- cooked brown rice
Directions
Arrange rice in a serving bowl; top with edamame, cabbage, carrot, peppers and quartered eggs. Drizzle with vinaigrette and garnish with cilantro and sesame seeds.
Tips
Replace the Asian vinaigrette with sweet Thai chili sauce.
Brown rice can be replaced with cooked quinoa, barley, farro or couscous.
For a lunchtime make ahead: layer the ingredients into a re-sealable container or Mason jar in the order given. Refrigerate for up to 2 days.
