Feta Eggs

Ingredients

1/3 cup
crumbled feta cheese

hash brown patty, thawed
2 tbsp
guacamole
1
small or medium tortilla
spicy pizza oil, to taste

Directions

  1. In a non-stick pan, warm the tortilla on both sides and set aside.

  2. Using the same pan over medium heat, crumble the thawed hash brown with a spatula and cook for one minute.

  3. Sprinkle crumbled feta over the hash brown pieces, then crack the egg in the center.

  4. Cover the pan with a lid and cook the egg until it reaches your desired doneness.

  5. Meanwhile, spread guacamole on the tortilla.

  6. Once the egg is cooked to your liking, carefully transfer it onto the tortilla using a spatula and drizzle spicy pizza oil on top to taste.
