Ingredients

1 cup / 250 g
Simply Egg Whites liquid egg whites, well shaken
1/4 tsp / 1 ml
each salt and pepper
1/4 cup / 50 ml
shredded cooked skinless boneless chicken breast
2 tbsp / 30 ml
shredded low-fat cheddar cheese
1
green onion, chopped

Directions

  1. Spray 9” (23 cm) non-stick skillet generously with cooking spray; heat over medium-high heat. Pour in liquid egg whites; sprinkle with salt and pepper. Cook and stir for 30 seconds. Let cook 1-2 minutes or until eggs are almost set and bottom is browned.

  2. Sprinkle centre of omelette evenly with chicken, cheese and green onion. Reduce heat to medium; cover and cook 1-2 minutes or until set. Fold two sides of omelette over filling. Cut in half and slide onto two serving plates.

Tips

  1. Make two omelettes to serve 4.

  2. For convenience, cook a small chicken breast in microwave oven 2-3 minutes or until no longer pink inside.

  3. Fabulous with salsa* on the side!

Gluten Free

  1. * For gluten free: if using pre-packaged shredded cheese choose one that is gluten-free. Grease the skillet with vegetable oil or use a gluten-free cooking spray. If serving with salsa, make sure it is gluten-free also.

Tips: Whipping

When adding sugar to egg whites begin after the whites are foamy and then add 1 tablespoon at a time, beating as you slowly sprinkle the sugar in. Check to be sure that sugar is dissolved by rubbing a bit of beaten white between your thumb and forefinger. It should feel smooth.
