Chopped Egg Salad Sandwich

Try our egg-cellent twist on the viral chopped sandwich trend. Perfectly seasoned, deliciously creamy, and oh-so-satisfying.

Ingredients

4
EGGS2go! Omega 3 Hard Boiled Eggs
1
Ripe avocado
1 tbsp
Mayonnaise
1 tsp
Dijon mustard
1
Stem of green onion
4 slice
Your favorite bread
Salt and pepper to taste

Directions

  1. Place the hard boiled eggs, avocado, mayonnaise, mustard, green onion, salt, and pepper on a large cutting board.

  2. Use a large knife to chop and mix all the ingredients together until they are finely combined and the mixture reaches your desired consistency.

  3. Toast the bread slices.

  4. Evenly spread the chopped egg and avocado mixture onto a slice of toasted bread.

  5. Top with the remaining toasted bread slice to complete the sandwich.

  6. Cut the sandwiches in half, if preferred, and serve immediately.

Tips

  1. Add lettuce and tomato slices for some colour and crunch!

Tips: Hard Boiled

To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
