Ingredients

2 cup / 500 ml
rolled oats
1/2 cup / 125 ml
natural bran
1/4 cup / 50 ml
wheat germ
1/4 cup / 50 ml
all-purpose flour
1/4 cup / 50 ml
dried cranberries or raisins
2 tbsp / 30 ml
slivered almonds (optional)
2 tbsp / 30 ml
chopped walnuts (optional)
2 tsp / 10 ml
baking soda
2 tsp / 10 ml
ground cinnamon
1/2 tsp / 2 ml
ground ginger
1/2 tsp / 2 ml
ground nutmeg
1 cup / 250 ml
unsweetened applesauce
1/2 cup / 125 ml
skim milk
3 / 150 g
Naturegg Omega 3 shell eggs
3 tbsp / 45 ml
packed brown sugar

Directions

  1. Preheat oven to 350°F (180°C).

  2. Combine oats, bran, wheat germ, flour, dried cranberries or raisins, almonds, walnuts (if using), baking soda, cinnamon, ginger and nutmeg in a large bowl.

  3. Whisk together applesauce, milk, eggs and brown sugar in another bowl.

  4. Pour over dry ingredients and mix just to combine.

  5. Spread into a greased 8-inch (20 cm) square baking pan, smoothing top.

  6. Bake until a toothpick inserted into the centre comes out clean, about 35 to 40 minutes. Let cool completely in pan on a rack before cutting into bars.

Tips

  1. For a nut-free option so you can send them to school with your children, replace almonds and walnuts with 4 tbsp (60 mL) of your favourite dried fruits.
