Ingredients

2 tbsp / 30 ml
fine dry breadcrumbs
2 oz / 60 g
sodium-reduced ham, finely chopped
1/2 cup / 125 ml
very finely chopped green pepper
1/4 cup / 50 ml
very finely chopped onion
2 cup / 500 g
Egg Creations Fat Free Garden Vegetable, well shaken
1/2 cup / 125 ml
shredded Cheddar cheese

Directions

  1. Preheat the oven to 400°F (200°C). Lightly coat a 24-cup mini muffin pan with nonstick cooking spray. Sprinkle the cups evenly with breadcrumbs; rotate the pan around until all the cups are well-coated. Shake out any excess crumbs.

  2. Toss the ham with the green pepper and onion; add an equal portion to each muffin cup. Pour the eggs into each cup to fill just below the rim; sprinkle with cheese.

  3. Bake for 10 to 12 minutes or until set. Serve warm or at room temperature. Store, covered and in the refrigerator, for up to 3 days.

Tips

  1. Use 3/4 cup (175 mL) combination of other favourite vegetables such as chopped mushrooms, zucchini and tomato.
