Cloud Eggs

Directions

  1. Preheat your oven to 450 degrees.

  2. Separate the eggs, putting the egg whites into a mixing bowl and the yolks into 4 separate small bowls. Put the yolks in the fridge until step 6. Use salt and pepper to season the egg whites. Gently fold in any additional ingredients you have chosen.

  3. Beat egg whites for 2-3 minutes until they form stiff peaks (similar to how you would make meringue).

  4. On your baking sheet, place the whipped egg whites into mounds or clouds. Use the back of a spoon to create dents in the center of each cloud.

  5. Bake until slightly golden (about 3 minutes).

  6. Remove from oven and place egg yolk in the center of each cloud. Season yolk with salt and pepper.

  7. Place the eggs back into the oven for another 2-3 minutes, until the yolks are just set.

Tips

  1. When beating egg whites, add a teaspoon of cold water for each egg. The volume increases significantly

  2. An easy way to separate eggs is to place a small funnel over a small measuring cup. Break the eggs into the funnel

  3. You can include any additional ingredients to customize your cloud eggs (e.g. chives, bacon bits, etc.)
