Ingredients

2 tbsp / 30 ml
butter, divided
1 cup / 250 g
Egg Creations Fat Free Original, well shaken
1 package / 700 g
pizza dough (deli-prepared or use homemade)
1/4 cup / 60 ml
each chopped red pepper and green onion
1/4 cup / 60 ml
crumbled cooked bacon or diced ham (optional)
1 1/2 cup / 375 ml
shredded Cheddar-mozzarella cheese blend, divided

Directions

  1. Preheat oven to 400°F (200 °C).

  2. Heat 1 tbsp (15 ml) butter in a medium nonstick skillet set over medium heat. Add eggs and cook, without stirring for 1 minute. Cook, stirring for 1 additional minute or until eggs are very softly set. (Do not over-cook as eggs will continue to cook in oven.)

  3. On a lightly floured surface, roll out pizza dough into a large rectangle, about 16 x 12 inches (40 x 30 cm). Melt remaining butter; brush over dough.

  4. Arrange scrambled eggs evenly over top leaving a 1-inch (1/2 cm) border along the long side closest to you, and 2-inch (5 cm) border along the opposite side. Scatter red pepper, green onion, bacon or ham (if using) evenly over eggs. Sprinkle with 1 cup (250 ml) cheese.

  5. Starting at long edge closest to you, roll up dough (cinnamon bun style), pinching seams to seal. Slice into 12 equal-sized rounds.

  6. Keeping rolls intact and reshaping as needed; arrange rolls cut-side-down, on a parchment paper-lined baking sheet. Bake for 30 minutes. Sprinkle with remaining cheese. Bake for 4 to 5 minutes longer or until golden and cheese is melted. Serve warm.

Tips

  1. Rolls can be reserved in the refrigerator for up to 3 days and rewarmed in the microwave to serve. Heat 1 roll for 30 seconds on High power.

  2. If using refrigerated dough, bring dough out of the fridge for 20 minutes to warm up before rolling.

  3. Egg Creations Whole Eggs Original can be used instead of Fat Free.
