Ingredients

Greek yogurt

baby dill pickle, finely chopped
1 tbsp / 15 ml
chopped green onion
1 tsp / 5 ml
Dijon mustard
pinch
salt and pepper

large whole wheat tortilla
1/4 cup
baby spinach and sliced cucumbers

Directions

  1. Grate eggs into a small bowl; blend in yogurt, onion, dill pickle, mustard, salt and pepper.

  2. Spoon onto the tortilla. Top with spinach and cucumber. Roll up and enclose to eat.

Tips

  1. Serve this zesty sandwich spread on any choice of bread, wrap or bun.

  2. For a sweet and tangy variation, replace the dill pickle with 1 to 2 bread and butter pickles.
